Ok, I’ve not been having the best time. A few weeks ago, I sprained my ankle (which you would think would give me more time to cook, but no). Then as soon as I could walk like a normal human, I caught a ridiculously irritating cold.
Still, food is back in my busy life so prepare yourselves for quite a lot of recipes!
Help-I-haven’t-got-any-butter Chocolate Cake
Ingredients:
140g/1¼ cups self raising flour
190g/1 cup caster sugar
40g/⅓ cup cocoa powder
1 tsp bicarbonate of soda
1/2 tsp salt
200ml/¾ cup milk
1 tsp vanilla extract
80ml/⅓ cup vegetable oil
2 eggs
Method:
Preheat the oven to 180 degrees C or 350 degrees F, and grease a medium size cake tin. Sift and stir together the dry ingredients, and make a ‘well’. Add all of the wet ingredients and use an electric whisk on a high setting to combine the ingredients. Pour into the tin and bake for about 25 minutes.
Leave to cool for 2 hours, then ice with either an orange icing or chocolate glaze.
